Sweet potatoes are low in fat, but contain megadoses of . It is a good source of fiber and potassium. With so much going for it, sweet potatoes are hard to beat.
Of course, we include sweet potatoes in our Christmas meal. I have a recipe that I’ve prepared for years. It’s more of a sweet potato casserole, with plenty of butter, spices, and pecans. One of my favorite everyday sweet potato recipes is sweet potato fries.
Cut them into french fry size. Bake them in a 400 degree oven, and yum, you have a healthy side dish. The first time I had them, I felt as if I had made this marvelous discovery.
For those on a low carb diet, they do pack plenty of carbs, but their glycemic load is small. Still, there’s no reason not to enjoy this welcome break from potatoes. Bon appetit’!
