St. Patrick’s Day Feast


four leaf clover St. Patricks Day FeastWe celebrated Mardi Gras with a traditional meal. St. Patrick’s Day will be no exception. You can’t have an Irish meal without Guiness. It’s the stuff of tradition. Guiness celebrated its 250th anniversary in 2009. I have great respect for a country which can exist for so long.

To feature Guiness, I’m preparing Stout-Braised Short Ribs which get to simmer in its lovely taste for 6 hours in the slow cooker. The slow cooker and I have created quite the bond since I’ve gone freelance fulltime. Can’t beat having a meal ready to eat when it’s time to knock off.

Accompanying the ribs is a lovely Irish dish that I’ve made before. Colcannon is the essence of comfort food with potatoes, bacon, and cabbage simmered together with butter and milk. It’ll be just the thing to catch all those tasty drippings from the ribs.

Being a second-generation American, I can relate to the thousands of Irish-Americans who celebrate their homeland with a traditional St. Patrick’s Day feast. Of course, on this day, we are all Irish can can celebrate the tradition of fine Irish cooking.
