A salad is a perfect way to get in a few extra servings of veggies or fruits, depending upon your recipe. It’s hard not to be drawn to a salad with its array of delightful colors.

There’s another benefit of enjoying a pre-dinner salad. If prepared properly, a salad will fill you so that you will indulge less on a high caloric meal.

To get your started, here is a recipe for a basic vinaigrette, a base for many wonderful variations.

This recipe has so much going for it–fresh greens, ripe strawberries, and big flavors. I have to admit to not being a fan of blue cheese. For me, goat cheese is a marvelous substitute. This recipe showcases a good balsamic vinegar. If you have a bottle that you’ve wanted a recipe to showcase its superior flavor, this is it. Make sure and toast the pecans for added flavor.
